If a deer isn’t processed in exactly the right way, the resulting meat will be even tougher and it won’t look appetizing lying there on your plate. We also know how to butcher the carcass to get cuts of meat that you can use, so none of your deer gets wasted. You may even get to taste cuts you’ve never eaten before. Loin chops, for example, are one of the most delicious parts of the deer but they’re a dish many deer hunters who do their own butchering never get to taste because the chops are so difficult to separate from the surrounding musculature of the back and spine.
